OVEN BAKED YOGURT DONUTS

Delicious for the whole family. Easy to make. Nutritious-packed with protein and fiber. Moist and light thanks to the addition of yogurt inside and out. Gluten free. Check out the fabulous toppings too!


Ingredients:
2 eggs 
1/2 cup plain Greek yogurt 
1/3 cup maple syrup
1/4 cup melted butter 
1 cup oat flour 
2 tsp vanilla 
1 1/2 tsp baking powder 

pinch salt
Yogurt glazes:
1. Vanilla glaze: 1/2 cup plain yogurt, 2 tbsp maple syrup, 2 tsp vanilla extract.
2. Chocolate glaze: 1/2 cup plain yogurt, 3 tbsp maple syrup, 1 tbsp cocoa, 1 tsp vanilla extract.  
Directions:
In a bowl mix eggs, yogurt, maple, butter & vanilla. Slowly add oat flour, baking powder and salt.
Grease donut baking pans with coconut spray and pour the batter 3/4 way full. Bake 
at 350 for 15 min till golden in color and tooth pick comes out clean. Cool and pop out onto cooling trays. 
Mix glaze of your choice with a whisk. Spread on to baked donuts. Sprinkle with one of these awesome topping combinations:
*goji berries, cacao nibs/choc chips, coconut flakes blended. 
*walnut pieces & chia seeds 
*ground flax meal & coconut sugar 
*colorful/chocolate sprinkles for the kids

OVEN BAKED DONUTS

All three recipes need a doughnut baking pan, regular/mini size (order on Amazon.)

1. GRAIN FREE ALMOND BAKED DOUGHNUTS: these are glutenfree and awesome! 
Just 4 ingredients:  1 cup almond flour, 3 tablespoons maple syrup, 2 eggs, 2 tsp vanilla extract, 1/4 tsp baking soda.  Grease the doughnut pan, mix ingredients until smooth. Fill each doughnut cavity  3/4 way full. Bake 10-15 min.  Drizzle with chocolate topping: 1 teaspoon cocoa & 2-3 teaspoons maple mixed. They're delicious @southerninlaw thanks! 
2. OUT THE DOOR CHIA POWER DOUGHNUTS: #vegan #glutenfree packed with #fiber #protein & #omega3, they're dense & filling!  
Ingredients: 
3/4 cup oat flour,  1/2 cup chia seeds, 1 1/2 tsp baking powder, 1/4 teaspoon cinnamon 1/3 cup maple syrup, 1/3 cup milk of your choice, 1 tsp vanilla extract. 
Coconut lemon whipped cream: 
1 can coconut cream (don't use liquid) squeeze fresh lemon and maple syrup to taste. Mix ingredients with fork, fill doughnut cavity to the top. Bake at 350 for 20 min. When cooled mix frosting ingredients and drizzle on top of desired. Fabulous as always @ohsheglows 
3. BANANA CHOCOLATE CHIP DOUGHNUTS: (dairy) my kids lapped these up! Ingredients:
1 mashed banana 
1/2 cup apple sauce 
1/2 cup coconut sugar 
1/2 cup Greek yogurt 
1/4 cup melted butter
2 eggs 
1 teaspoon vanilla extract 
2 cups spelt flour 
1 teaspoon baking powder
1 teaspoon baking soda 
Pinch salt 
3/4 cup chocolate chips 
Mix all ingredients with a fork and fold in choc chips. Grease doughnut baking pan and scoop the batter in 3/4 way full into each doughnut mould. Bake @ 350 10 min.

BALANCED PLATE WITH OVEN BAKED LATKES

loved by the whole family with half the amount of oil as fried latkes

Ingredients:

8 potatoes 

1 onion

1/4 cup oil

5 eggs 

1-2 tbsp salt 

Pepper to taste 

Directions:

Preheat oven at 475 degrees. Line a baking pan with a baking sheet. Drizzle oil on the sheet and place in the oven for a few minutes, the oil will spread. Grate potatoes and onion. Drain all  liquid out in a strainer. Add eggs, oil, salt pepper.  Spoon latkes mixture on the heated oil. Spray the tops and bake uncovered for 10 minutes and then turn over with spatula and bake another 10 minutes till crispy! #latkes #chanukah #balance #spreadthelight ✨🕎✨

Chocolate Baked Donuts

Topped with sweet donut glaze & sprinkles

Ingredients: 

1 egg

1/4 cup cocoa powder

1/2 cup coconut sugar 

2 tbsp maple syrup

2 tbsp coconut oil melted

 1/4 cup almond milk 

2 tbsp apple sauce

 1 cup spelt flour

1 1/4 tsp baking soda

1 tsp vanilla extract

Glaze:

3 tbs cocoa powder

1 tbsp hot water

3-4 tbsp maple syrupDirections: Mix wet ingredients, add dry and mix till combined. Grease donut baking pans (mini or regular- these are mini)  with coconut spray. Pour batter 3/4 way full. Bake at 350 for  10 min till tester comes out clean. When cooled pop out of pans. Mix glaze ingredients with a fork. Drizzle glaze on cooled donuts and sprinkles.
